To begin, peel and slice some sweet onions.

Recipe Note: While French onion soup generally does not contain meat, try adding some left over roast beef to this. Simply shred it and add it when you add the broth. It makes for a great alternative, and and even heartier soup.

  • 4 sweet onions
  • 1/4 c unsalted butter - or ghee
  • 1 clove garlic - minced
  • 1/2 c red wine
  • 2 springs fresh thyme
  • 1 bay leaf
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp sea salt
  • 1 quart beef broth
  • 1/4 c water
  • 1 Tb tapioca starch - flour

Instructions
 

  • To begin, peel and slice the onions.
  • Melt the butter in a Dutch oven and add in the sliced onion.
